Pumpkin Pie Baked Oatmeal

This is a client favorite. It reheats well and can also be frozen to enjoy later.

  • 2 c rolled oats
  • 1t pumpkin pie spice (more to taste)
  • 1/4 c maple syrup
  • 1c pumpkin ( I used canned)
  • 2 T melted coconut oil
  • 3/4 c almond milk
  • 1/4 t salt
  • 1/2 t baking soda
  • 1/3 c pecans
  • Optional: 1/4 c chocolate chips!

Combine all ingredients. Spread into greased 8x8 or 11x7 baking dish. Bake at 375 for 45 minutes. Allow to cool slightly, then cut into squares. Reheats well in the toaster oven.

Double ingredients for a 9x12 pan.

Cook for 15-20 minutes if using muffin tins.
