Cashew Egg Nog

This is a decadent treat at the holidays, or anytime. Summertime? Mix with ice in blender for a frozen treat.

  • 1 cup raw cashews
  • 2 cups water
  • 1 can full fat coconut milk (not light)
  • 1/3 c maple syrup (or to taste)
  • 1 t vanilla extract
  • 1 t nutmeg
  • ½ t cinnamon
  • dash salt

 

Soak cashews 4 hours or overnight in water. Drain and rinse. Add all ingredients to a high speed  blender and blend until smooth. If blender is not high speed, strain with a fine mesh sieve or nut milk bag. Chill and enjoy!

 


Raspberry Mint Mocktail

  • 4 cups white grape juice
  • 4 cups sparkling water or seltzer
  • 1 bag frozen raspberries
  • mint leaves to garnish

 

Combine and serve cold.
